Ingredients:
(for ᴓ 26cm form)
335g flour
40g baking soda
1 ½ teaspoons cinnamon
1 teaspoons nutmeg
2 vanilla beans
160g ground coconut, unsweetened
7 eggs
240g sugar
200g vegetable oil
670g finely ground carrots
Let’s bake it:
In a mixing bowl mix sugar and eggs. Add vegetable oil. In another bowl, mix together flour, baking soda, nutmeg, vanilla extract, coconut and cinnamon. Put dry ingredients into wet mixture and blend well. Add carrots until well blended.
Put the mixture in cake tin, 2/3 high. Bake approximately 40-50 min, 170 C. Check with a wood stick is it baked (inserted into the middle comes out clean). If needed put, after 20-25 min, at the top of the cake baking paper. Let it cool on a wire rack and cut the cake into two layers.
For the creme:
350g Mascarpone cheese
350g cream cheese
150g whipped cream
60g powdered sugar
2 vanilla sugar
Juice and zest of 1 lemon
Mix all ingredients with a whisk Place both cream cheese and lemon juice in mixing bowl and mix well. Add powdered and vanilla sugar and mix again well.
With spatula, evenly spread approximately 1/3 of frosting on the first layer. Center second layer on the top of the first layer. Again with a spatula, evenly spread approximately 1/3 of the creme on the layer. Center third layer on the top of the second layer with top side down. Using both hands, press firmly but gently, all layers together to get one firm cake. With spatula, spread remainder of the creme to cover top and sides of cake. Decorate the cake.

335g brašna (prosijati)
40g praška za pecivo
1 1/2 čajna žlica cimeta
1 čajna žlica muškatnog oraščića
2 mahune vanilije
160g kokos raspela
7 jaja
240g šećera
200g ulja
670g sitno ribane mrkve
Postupak:
Jaja i šećer izmutiti mikserom te dodati ulje. U drugoj posudi pomiješati brašno, kokos, cimet, muškatni oraščić, vaniliju, prašak za pecivo. Obje smjese mikserom na najmanjoj brzini pomiješati. Dodati naribanu mrkvu. Kalup za pečenje napuniti do 2/3 visine i staviti peći na 170 C, 40-50 minuta, ovisno o pećnici. Drvenim štapićem provjeriti je li pečeno. Po potrebi nakon 20-25 minuta pečenja staviti papir za pečenje preko kolača da ne potamni.
Kada se ohladi, prerezati na dva dijela.
Za kremu od sira:
350g Mascarpone sira
350g svježeg kremastog sira
150g tučenog slatkog vrhnja
60g šećera u prahu
2 vanilin šećera
Sok i korica od 1 limuna
Postupak:
Sve sastojke sjediniti pjenjačom. 2/3 kreme podijeliti na dvije kore, a ostatkom premazati tortu. Dekorirati po želji.
