Wild garlic soup/Juha od medvjeđeg luka

Ingredients:

2 parsley roots

3 parsnips

¼ celery roots

White part of 1 leek

1 small onion, chopped

1 cloves of garlic

Salt and pepper

½ tbsp of nutmeg

Water as needed (or vegetable stock)

100g wild garlic

Olive oil

Juice of 1 small lemon

Decoration:

Lemon zest, young onion (sliced) and chives.

Cut vegetables in cubes (do not need to be too small, because all will be mixed after cooking). Heat olive oil in a large sauce pan and sauté onion, garlic, chopped vegetables and nutmeg. Add water or stock (so much to cover vegetables) and bring to boil. Turn the heat down and cook until vegetables are soft. Pour all into blender, add wild garlic and blitz until smooth. Add more water or stock if needed. Season with salt, pepper, nutmeg and lemon juice.

Serve with sliced young onion, lemon zest and chives.

Potrebno:

2 korijena peršina

3 pastrnaka

¼ korijena celera

Bijeli dio 1 poriluka

1 manji luk

1 češanj češnjaka

Sol i biber

½ žličice muškatnog oraha

Voda po potrebi

100g medvjeđeg luka

Maslinovo ulje

Sok 1 manjeg limuna

Dekoracija:

Korica limuna, tanko rezani mladi luk, vlasac.

Korijenasto povrće narezati na kocke. Luk i češnjak narezati na sitnije kocke. Na malo maslinovog ulja prodinstati luk, češnjak, peršin, pastinake, celer, bijeli dio poriluka, muškatni orah. Podliti s vodom (za početak toliko da prekrije povrće) i lagano kuhati dok povrće ne omekani. Skuhano povrće i medvjeđi luk staviti u mixer i sve zajedno mixati do željene gustoće. Po potrebi dodati vode. Začiniti sa soli, biberom, limunovim sokom.

Servirati uz tanko rezani mladi luk, koricu limuna, grančice vlasca.
