The most beautiful mornings are those with the smell of freshly baked rolls, in exactly 30 minutes (preparation and baking included :)). Without yeast and waiting for dough to double in volume, once, twice…and at the end we gave up baking the healthier rolls, those baked at home. With my rolls with only few ingredients and baking powder instead of yeast there is no waiting at all. Enjoy warm, soft, aromatic bites in the morning, evening or when your friends come over unexpectedly.
My rolls are with finely chopped fresh thyme, rosemary and chives that grow on my balcony. Two spoon of homemade olive oil are final touch for Mediterranean flavor, but you are going to be just fine with butter or vegetable oil instead of olive oil.
You want some delicious fast and furious bites to go? Add some chopped semi dried tomatoes or olives, form 30g rolls, bake them and serve in paper bag. The only problem you are going to have is to defend your aromatic, delicious, sweet mini bites from all around you!
Are you big fan of Italian finger food? No problem. Form sticks instead of rolls, make delicious grissini! Sprinkle some sesame, flax seeds or finely grated cheese before baking.
Now is wild garlic Saison, use it to give a special taste to your rolls and bread. For all brave aromatic rolls lovers I would recommend 1 spoon of finely chopped garlic, parsley and olive oil mixture. Just add in dough and enjoy!
Ingredients:
280g flour (I used spelt flour, if you use whole wheat or rye flour you may need little bit more of yoghurt or water)
200g yoghurt
1 tsp of salt
1 tsp of herbs, dried or fresh (I used thyme, rosemary and chives, fresh, finely chopped)
½ pack of baking powder
2 tbsp of olive oil (or vegetable oil/butter)
Preheat the oven on 190 C.
Sift the flour and baking powder. Add salt, herbs, oil and yoghurt and knead the dough. Do not knead too long while you do not need smooth dough as the one with yeast. Form rolls straight after kneaded while this dough does not need to rest or double in volume. I got 6 rolls/88g each, sprinkle some flour and score with knife or razor blade and bake about 20 minutes.

Najljepša su jutra uz miris svježe pečenih peciva, gotovih za točno 30 minuta (priprema i pečenje uključeno). Nema kvasca, čekanja da se tijesto udvostruči, pa još jednom i tako odustanemo od najzdravijeg peciva, onog napravljenog kod kuće. S ovim prekrasnim lopticama od samo nekoliko sastojaka i praška za pecivo umjesto kvasca, nema čekanja. Uživate u toplim, mekanim, aromatičnim zalogajima ujutro, navečer ili kada vam se iznenade gosti.
Moja peciva aromatizirana su sitno sjeckanim svježim timijanom, ružmarinom i vlascem s mog balkona. Dvije žlice domaćeg maslinovog ulja daju onaj savršeni mediteranski okus, ali i s maslacem ili običnim uljem nećete pogriješiti.
Želite brze, male zalogaje za van? Umijesiti u tijesto sitno narezane polusušene rajčice ili masline, formirajte mini peciva od 30g, ispecite i upakirajte ih u papirnatu vrećicu. Jedini problem koji ćete imati je obraniti se od svih koje će privući ovi mirišljavi, preslatki mini zalogaji.
Obožavatelj ste talijanskog finger food-a? Nema problema. Od tijesta oblikujte prutiće i imate neodoljive grisine! Pospite sezamom, lanenim sjemenkama ili sitno ribanim sirom prije pečenja.
Sada je sezona medvjeđeg luka, idealno za aromatizirati peciva i kruh. Za one hrabrije preporučujem sitno narezati češnjak i peršin, preliti maslinovim uljem i dodati žličicu ove smjese u peciva.
Sastojci:
280g brašna (ja sam koristila crno 630, ako koristite punozrno ili integralno, dodajte malo više jogurta ili vode)
200g jogurta (tekući ili gušći)
1 čajna žlica soli
1 čajna žlica začina, svježih ili suhih (ja sam koristila timijan, ružmarin i vlasac, svježi, sitno narezani)
½ vrećice praška za pecivo
2 jušne žlice maslinovog ulja (može i običnog ili otopljenog maslaca)
Pećnicu zagrijati na 190 C.
Brašno i prašak prosijati. Dodati sol, začine, ulje i jogurt te umijesiti tijesto. Tijesto ne treba dugo mijesiti jer ne mora biti glatko kao ono s kvasce. Odmah oblikovati peciva, posuti s malo brašna, zarezati s nožem ili žiletom i peći oko 20 minuta.
