It smells and tastes like Spring/Mirisi i okusi proljeća na tanjuru

When you start to bring spring on your plate, that means it is really Spring around the corner :). So, I did bring spring on my plate with all those beautiful colors and tasts…let’s see if I can wake up spring in you with this beautiful salad…take a ride with me…

Ingredients for salad:

Mix of fresh salad, quail eggs, green beans, potato, tuna-filets can, onion, small capers, cherry tomatoes different colors, croutonsi.

Let’s mix it!

Boil quail eggs (approximately 3 minutes), as well as green beans and put them immediately in cold water with ice. Boil potato with skin, peel of the skin and cool down. Make potato circles with melon baller and marinate until served.

Put tune in a sieve to lose oil. Slice onion, not too thin. And at the end cut cherry tomatoes in half or in quarters.

Mix fresh salad with little bit of dressing. Serve on a plate and add potato, tomatoes, eggs (cut in half) and all others ingredients. Pour all over dressing, especially over eggs and tomatoes. At the end add small capers.

Dressing: olive oil, lemon juice, salt, pepper, balsamic vinegar, honey, brown sugar, finely cut parsley and chives.

Stir lemon juice, sugar, honey, salt and pepper. Add balsamic vinegar and stir well, then add easy olive oil and stir all the way until you get desired thickness.

At the end season if needed. Keep in a cool place until served.

-Croatian version-

Kada počnem slagati proljetne boje i okuse na tanjur, znam da je proljeće debelo pred vratima…prekrasne boje i osvježavajući okusi, svježe povrće, lagani dresing za salatu….pa krenimo na put kroz ovaj lagani obrok…tko zna možda probudi i one malo još uspavane u zimskom snu….

Sastojci za salatu:

Mix različite svježe salate, prepeličja jaja, mahune, krumpir, tunjevina, luk, kapari, mini rajčice raznih boja, croutonsi.

Pa krenimo sastavljati:

Prepeličja jaja skuhati (otprilike 3 minute), mahune kratko prokuhati u slanoj vodi i odmah staviti u hladnu vodu s malo leda. Krumpir skuhati u kori, ohladiti i izraditi polukuglice te marinirati dresingom do upotrebe.

Tunjevinu iz konzerve staviti u cjedilo da se iscijedi višak masnoće. Luk narezati na tanje polukolutove, minirajčice prerezati na pola, a one krupnije na četvrtine.

Zelenu salatu posebno promiješati s malo dresinga. Servirati na tanjur te dodati marinirane polukuglice krumpira, mini rajčice, prepeličja jaja isve ostale sastojke. Lagano preliti dresingom, posebno preko jaja i rajčica. Na kraju dodati kapare.

Za dresing: maslinovo ulje, limunov sok, sol, biber, aceto balsamico, med, smeđi šećer, sitno kosani peršin i vlasac.

Limunov sok, šećer, med, sol i biber kratko promiješati pjenjačom. Dodati aceto balsamico i također dobro sjediniti pjenjačom, te polako dodavati maslinovo ulje do željene gustoće uz stalno miješanje.

Na kraju još jednom začiniti po okusu i dodati sitno kosani vlasac i peršin.
